Like a greedy flower starved for water I can say that spring has arrived after devouring the first basket of locally grown strawberries. When that first basket disappears I’m looking for a cake that screams spring with a big bang of intense strawberry flavor. This spring I found that recipe with Strawberry Almond Cake with Strawberry Crumble.
The strawberry crumble that melts into the top of the Strawberry Almond Cake is a game changer. Freeze dried strawberries are blitzed into strawberry dust in the food processor and become a major component in the crumble. Plus the crumble is strawberry pink colored! And of course intensely strawberry flavored. Just the spring flavor I crave.
Essentials
I made a few changes to the recipe for Strawberry Almond Cake with Strawberry Crumble, using a 9” square pan instead of a 9” spring form pan. Lining the square pan with parchment for easy removal of the cake is recommended. The edges of the cake bake much faster than the center. After 30 minutes in the oven cover the edges of the cake with foil. The almond paste I used came in 7oz rather than the 6oz in the recipe. I used the entire 7oz with good results. A sprinkle of almonds on top of the cake is a crunchy reminder that the cake is a Strawberry Almond Cake with Strawberry Crumble.
