Easy Yeasted Banana Bread with Toasted Pecans

Yeasted Banana Bread with Toasted Pecans

A Recipe for the Forgotten Bananas

“Breakfast, he said and nudged the door open with the edge of the linen-covered tray. He pushed the door closed with his knee. Want it there? He asked and gestured toward the gray room with his chin. No, I’ll have it right here. And I want a boiled egg and a piece of cinnamon toast.”

I started making this bread with the forgotten bananas. My excuse was to make fresh bread for breakfast that included whole grain flour. But when this loaf is barely cool enough to slide from the hot pan thick slices have been cut and devoured, usually toasted and then slathered with both butter and honey. Leaving barely half a loaf for my breakfast plans. What’s left of the Yeasted Banana Nut Bread gets toasted for our for breakfast. To jump start our day we add a scoop of almond butter for protein. But if my vision of cream cheese ever so slightly melting on the warm toast sounds better, give it a try. If that’s not enough enticement, I’ve discovered that apricot jam is another fine option. Buttermilk Shortcake with Strawberries and Mint

Buttermilk Shortcake with Strawberries and Mint

The First Fruit of Spring

“There were others who prophesied, with rays shining on their foreheads, about the sometime ditches that would carry water all over the valley—who knows? maybe in our lifetime—or deep wells with steam engines to pump the water up out of the guts of the world. Can you imagine? Just think what this land would raise with plenty of water! Why, it will be a frigging garden!”

In California, spring came early. It rained like crazy in December and we were hopeful that the drought would ease. Instead we have had an early spring with so many days of sunshine I have almost forgotten about the coastal fog. I got an email notice from our local farm stand, The Farm, saying the strawberry harvest began early this year and flats of berries were available before the farm stand opens in late April. I was so excited at the thought of sweet, organic strawberries that I had to have some. Driving home, the scent of the first fruit of spring was overpowering. I easily devoured an entire basket that afternoon. The next morning we had some with our breakfast. I made these shortcakes and then as quickly as they arrived, the first fruit of spring was gone. The Easiest of Recipes

“Charles placed seven eggs on top of the warming oven and built his fire carefully of small pieces of kindling until it burned fiercely. He put the skillet down next to the flame. His sullenness left him as he fried the bacon.”

This is barely a recipe. It started, as many things do, with items from the pantry. There was the push to get dinner done and fresh kale that needed to be used. The first time I stirred together just garlic, kale and beans. It needed more and I added the red pepper flakes along with the garlic. Later lemon zest and a sprinkle of cheese made this into a recipe. It has become a favorite. Fresh, quick, full of healthy ingredients, an easy recipe like this deserves to be shared. Kiwi Lime Tart with a Pretzel Crust

Kiwi Lime Tart with Pretzel Crust

A Winter Kiwi Harvest

“They don’t have any winter in California,” he said. It’s just like spring all the time.”

East of Eden, John Steinbeck

Inspiration

There is something astonishing about being able to pick fruit in the middle of winter. On a bright sunny California day it’s easy to forget it’s January. We went to pick kiwi and the winter sunshine was so warm that no jacket was needed. The last time we picked kiwi I made a cake. This time I made a tart. There is an explosion of flavor in this voluptuous dessert. Tucked under a canopy of kiwi is a pretzel crust loaded with lime curd. Each component is marvelous. A buttery and salty pretzel crust that is easy to make. It supports the velvety lime curd with a solid foundation of crunch. Then lots of kiwi with their big green color and bright floral flavor top off this marvelous dessert. READ MORE . . .

An Irresistible Adventure – Baked Elements

“How are you? Charles asked. Fine. Did you get the book? No. I wonder what happened to it? It had pictures.”

dipI’ve been haphazardly baking my way through Baked Elements by Matt Lewis and Renato Poliafito and every recipe I try has been wonderful. It all started with their famous Brooksters. The combination Brownie and Chocolate Chip Cookie is quite amazing. I added the Pumpkin Almond Cake with Almond Butter Frosting to my fall must-bake list. (There are only two other items on my fall baking list, this Brown Sugar Pear Cake and a Cranberry Bundt with lots of orange.) The Sunrise Key Lime Tarts are coveted by all the citrus lover’s I know. It’s almost impossible to eat only one of the Bale Bars. If you like cinnamon, the Cinnamon Spritz Sandwich Cookies are spectacular. The soft meringue filling is just fabulous. The Poppy Seed Cake with Brown Butter Glaze is phenomenal. Speaking of brown butter, don’t miss the Brown Butter Snickerdoodles. And then I made the Candy Bar Cookies. READ MORE . . .
