Inspiration

Growing a summer vegetable garden is something I always want to do. I give it a try and usually have more fails than wins. Tomatoes are always a priority, but between the summer fog and our mostly shaded backyard thriving is random. Still, I’ve planted three tomato plants again this spring, Sun Gold, Celebrity and Giant Red Cherry. (I’ve given up on Early Girl.) We’re trying a different spot, but 6-8 hours of direct sun is more of a desire than a reality. Herbs do thrive. I’m thankful for parsley, thyme, sage, oregano and rosemary. The best part of last summer’s vegetable garden was the Swiss chard. I planted a six-pack of plants that faithfully gave dinner worthy chard for an entire year. I even forgot about them during this year’s rain. Now they are bolting, going to seed. Before I say goodbye I’m harvesting the tender leaves that are growing along the stalks for salad greens and sharing this recipe from the Williams Sonoma Test Kitchen for Chard and Pancetta Lasagna with Sage.

If you like Swiss chard this is a recipe to try, if you could care less about chard but like lasagna (and think about adding more greens to your diet) this is a recipe to try. Or if you have an abundance of chard and another serving of sautéed greens is stifling, you must make this recipe. Inspiration

The last shards of summer are heaped in a pile waiting for my attention. I have made excuses. Not enough time, out of town visitors, trips north and south along the coast, a migraine and it’s flattening aftermath. I could make a longer list; but truly it’s all about summer. The months of September and October are traditionally what we call our Indian Summer. The dismal grey fog disappears mid morning and we are blessed with the glorious warmth and sparkling light of sunny days. The fog stayed late this year and our Indian Summer was just a mirage the entire month of September. How can we be ready for fall when summer just arrived? I marvel at pounds of ripe tomatoes, harvested inland, in the heat. Like shards of broken pottery, I hold onto the remnants of a greater thing, a summer almost missed. READ MORE . . .

This is the second summer recipe with pasta and pesto as key ingredients. I am always searching for a summer salad to serve when grilling. When potato salad is too heavy and another green salad is not substantial enough I often make Pasta Salad with Pesto with lots of veggies. Preparing the salad for dinner can be done earlier in the day and then I have time to make dessert! Gotta leave time for important things in life, like dessert. An abundance of tomatoes and basil seem to magically appear as the summer sun burns away the fog. Along the coast we wait in anticipation for the caressing warmth of summer. Like small children at Christmas who can’t wait any longer for Santa we wait for the bright glorious summer sunshine. Our spirits soar when there is no fog for a 5 day run and the temperature climbs into the high seventies. To celebrate summer I make fresh pesto and roast tomatoes for pasta.
